Ingredients
3 ripe tomatoes, quartered rich with natural Lycopene
2 tablespoons of cucumbers, finely chopped with peel left on
1 sweet red pepper, diced
2 tablespoons Spanish sherry vinegar or apple cider vinegar
2 tablespoons diced red onion
2 tablespoons olive oil
Small amount each of basil, parsley
Salt and pepper to taste
Orange peel for the twist
1 chili for tang
Method
In a food processor, grind the sweet pepper, tomatoes, onion, basil, parsley and chili until a smooth paste is formed.
Strain through a sieve to leave a fine mixture. Season with salt, pepper and vinegar.
Serve by garnishing with a small pool of olive oil, orange peel twist and cucumber cubes.
